Despite the huge debt that our governments managed to create, Italian people are great savers. Believe it or not, but many of our favourite dishes come from attempts not to throw away food. Today I’m going to talk about one of my favourite dishes: Supplìs, or rice balls.
First of all, keep in mind they’re very easy to make. All you need is rice leftovers (possibly from lunch) , then one egg,mozzarella, breadcrumbs, salt, pepper and nutmeg. The classic Supplìs are generally done with rice and tomato sauce, but you can choose any kind of rice: rice with pesto, rice with peas etc.
Put the rice in a bowl with the egg, salt, nutmeg, pepper and a tiny bit of breadcrumbs. Mix them with your hands and then take a little bit of rice, place a small square of mozzarella on top of it, then close the ball with some other rice.
Cover the rice balls with breadcrumbs. Meanwhile, warm up some frying oil in a pan. Then put your supplìs in the pan and cook them on every side. Once they’re ready, place them on a plate with kitchen paper to make all the excessive oil go away.
And here you are… Il piatto è pronto!
